Method
 

Step-by-Step Instructions
  1. Prepare the Marinade: Whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, thyme, rosemary, smoked paprika, salt, and pepper until smooth.
  2. Marinate the Mushrooms: Place mushrooms in a resealable bag or dish, pour marinade over them, and refrigerate for at least 30 minutes, ideally 2-3 hours.
  3. Soak the Skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.
  4. Preheat the Grill: Preheat grill to medium-high heat, oil grates just before placing skewers.
  5. Assemble the Skewers: Remove mushrooms from marinade and thread onto skewers, alternating with colorful vegetables.
  6. Grill the Skewers: Cook skewers for 10-12 minutes, turning occasionally and brushing with leftover marinade.
  7. Serve and Garnish: Transfer to a platter, sprinkle with chopped parsley or chives, serve warm.
