Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400ºF (204ºC) and grease a mini muffin tin.
  2. Cook the sausage in a skillet over medium-high heat for 5-7 minutes until browned. Drain excess grease.
  3. Mix pancake mix, water, and maple syrup in a bowl until just combined; avoid overmixing.
  4. Fold in the cooked sausage and shredded cheddar cheese evenly into the batter.
  5. Fill each muffin cup about three-quarters full with the mixture, adding any optional ingredients if desired.
  6. Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool for 5 minutes, then transfer to a wire rack. Serve warm and drizzle with extra maple syrup if desired.
