  1. Begin by washing and patting dry the chicken thighs. Rub them with salt and black pepper.
  2. In a large skillet, heat olive oil. Brown the chicken thighs for approx. 10 minutes on each side.
  3. Sauté half of the chopped onion in the same skillet until translucent, about 5-7 minutes.
  4. Blend tomatoes, red bell pepper, habanero pepper, and remaining onion until smooth.
  5. Pour the blended mixture into the skillet, bring to a boil and cook for 5 minutes.
  6. Return the browned chicken to the skillet, add chicken stock and seasonings, and stir.
  7. Cover and simmer on low heat for 20 minutes, stirring occasionally.
