Step-by-Step Instructions
  1. Preheat a skillet or griddle over medium heat. Brush both sides of thick-cut sourdough bread with olive oil. Place the slices on the skillet and toast for 2-3 minutes until golden-brown and crisp.
  2. In a mixing bowl, combine whole-milk ricotta cheese, a generous drizzle of wildflower honey, freshly grated lemon zest, and a pinch of ground cinnamon. Blend until the mixture is smooth and glossy.
  3. Spread the ricotta mixture over each slice of toasted sourdough. Thinly slice ripe pears and arrange them artfully on top. Drizzle with any leftover honey.
  4. Sprinkle a pinch of flaky sea salt over each toast. Add toasted chopped pistachios and garnish with fresh mint leaves. Serve immediately.
