Step‑by‑Step Instructions
  1. Start by bringing a large pot of salted water to a rapid boil over high heat.
  2. Add 8 ounces of pasta to the boiling water, and cook until al dente, about 8 to 10 minutes.
  3. Before draining, reserve 1 cup of the starchy cooking water, then drain the pasta.
  4. Season the 1-pound salmon fillet with salt, pepper, and a squeeze of lemon juice, then set aside.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium heat, then cook the salmon for about 4 to 5 minutes on each side.
  6. Remove the salmon and flake it into bite-sized pieces.
  7. In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
  8. Add 4 cups of chopped spinach and cook for 2 to 3 minutes until wilted.
  9. Pour in 1 cup of heavy cream and stir, then add 1/2 cup of grated Parmesan cheese.
  10. After a few minutes, add lemon zest, lemon juice, and optional red pepper flakes, simmering for another 2 to 3 minutes.
  11. Mix the drained pasta and flaked salmon into the sauce until evenly coated.
  12. Serve garnished with fresh parsley.
