  • 2 cups Roasted Red Peppers jarred or homemade
  • 3 cloves Garlic minced
  • 2 tablespoons Olive Oil or avocado oil
For Garnishing
  • 1/4 cup Fresh Herbs like parsley or basil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Place whole roasted red peppers on a baking sheet and roast for 25-30 minutes until charred.
  3. Transfer roasted peppers to a bowl, cover, and let steam for 10 minutes before peeling.
  4. Peel the skins from the peppers and blend with minced garlic and olive oil until smooth.
  5. Season tilapia fillets with salt and pepper. Heat a tablespoon of olive oil in a skillet over medium heat.
  6. Sauté the tilapia fillets for 3-4 minutes on each side until golden and flaky.
  7. Pour the roasted pepper sauce over the cooked tilapia and let it simmer together for 2-3 minutes.
  8. Plate the tilapia topped with the sauce, sprinkle with fresh herbs, and serve warm.
