Step-by-Step Instructions
  1. Begin by placing the uncooked chicken breasts at the bottom of your slow cooker.
  2. Sprinkle the diced onion over the chicken, followed by salsa, black beans, diced tomatoes, and green chiles. Pour in chicken broth.
  3. Sprinkle in chipotle chile powder, paprika, oregano, salt, and black pepper. Stir gently to combine.
  4. Cover and set to cook on low for 4 hours.
  5. Remove the chicken, shred it, then return to the slow cooker.
  6. Stir in the instant rice, cover, and cook for an additional 45 minutes.
  7. Sprinkle shredded cheese over the top and cover for 3-5 minutes to melt.
  8. Scoop into bowls and let everyone customize with optional toppings.
