Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes. Then mix in the egg, vanilla extract, and apple cider.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt. Gradually add this to the wet ingredients, stirring until just combined.
  4. Gently fold in the diced apples, ensuring even distribution.
  5. Using a cookie scoop or two tablespoons, portion out the dough and roll into balls. Place on the prepared baking sheet allowing space to spread.
  6. Bake for 10–12 minutes until edges are golden and centers are just set.
  7. Cool on the sheet for a few minutes, then transfer to a wire rack. Whisk together powdered sugar and apple cider for glaze and drizzle over cookies.
