- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes. Then mix in the egg, vanilla extract, and apple cider.
- In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt. Gradually add this to the wet ingredients, stirring until just combined.
- Gently fold in the diced apples, ensuring even distribution.
