- In a small saucepan, combine 1 cup of water and 1 cup of sugar. Heat over medium heat, stirring gently until the sugar dissolves completely, about 5 minutes. Once mixed, remove from heat and set aside to cool.
- Cut each lemon in half, carefully removing any seeds, and juice them to yield about 1 cup of freshly squeezed lemon juice.
- Cut off both ends of the fresh dragon fruit, peel away the skin, cube the flesh, and blend it until pureed.
- In the blender, add the cooled simple syrup and lemon juice, then pour in 2 to 3 cups of cold water to adjust taste. Blend until well combined.
- Pour the Dragon Fruit Lemonade over glasses filled with ice and garnish with lemon slices, dragon fruit cubes, and mint.
