Step-by-Step Instructions
  1. In a small saucepan, combine 1 cup of water and 1 cup of sugar. Heat over medium heat, stirring gently until the sugar dissolves completely, about 5 minutes. Once mixed, remove from heat and set aside to cool.
  2. Cut each lemon in half, carefully removing any seeds, and juice them to yield about 1 cup of freshly squeezed lemon juice.
  3. Cut off both ends of the fresh dragon fruit, peel away the skin, cube the flesh, and blend it until pureed.
  4. In the blender, add the cooled simple syrup and lemon juice, then pour in 2 to 3 cups of cold water to adjust taste. Blend until well combined.
  5. Pour the Dragon Fruit Lemonade over glasses filled with ice and garnish with lemon slices, dragon fruit cubes, and mint.
