Ingredients
  

For the Shrimp
  • 1 pound Large Shrimp, peeled and deveined
  • 2 tablespoons Olive Oil To coat shrimp
  • 1 teaspoon Paprika Can substitute with chili powder
  • 1 teaspoon Garlic Powder Can use fresh minced garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper (optional) Adjust for heat
For the Corn Salsa
  • 2 cups Frozen Corn, thawed Can use fresh corn
  • 1/2 cup Red Onion, finely chopped Or substitute with green onions
  • 1/4 cup Cilantro, chopped Omit if not desired
  • 1 small Jalapeño, chopped (optional) Adjust to taste
  • 2 tablespoons Lime Juice For tanginess
For the Creamy Garlic Sauce
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
  • 1/2 cup Sour Cream Or use more mayonnaise or yogurt
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic, minced Or substitute with garlic powder
For the Toppings
  • 1 medium Avocado, sliced or mashed
  • 1 tablespoon Sesame Seeds For garnish
  • 2 tablespoons Green Onions, chopped For garnish

Method
 

Preparation Steps
  1. In a medium bowl, combine shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper. Toss to coat and marinate for about 5 minutes.
  2. In another bowl, mix together corn, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir and let sit for 5-10 minutes.
  3. Preheat grill to medium heat. Grill shrimp for 2-3 minutes on each side until pink and opaque. Set aside.
  4. Whisk together mayonnaise, sour cream, minced garlic, lemon juice, salt, and pepper until smooth for the sauce.
  5. Assemble the bowls by layering corn salsa, grilled shrimp, and avocado. Drizzle creamy garlic sauce and top with sesame seeds and green onions.
  6. Serve immediately while fresh.
