For the Casserole
  • 4 cups shredded rotisserie chicken
  • 6 slices bacon can use turkey bacon
  • 2 cups fresh spinach or frozen, drained
  • 2 cups broccoli florets can be substituted with Brussels sprouts
  • 3 cloves garlic minced
  • 1 cup ranch dressing or mayo mixed with herbs
  • 2 cups cheddar cheese can mix with mozzarella
For Serving
  • 1 loaf low-carb bread
  • 1 bowl side salad light and crisp

Preparation Steps
  1. Poach or bake chicken until fully cooked, then shred or dice.
  2. Preheat the oven to 350°F (177°C).
  3. Par-boil broccoli for 2-3 minutes and cook spinach if using fresh.
  4. Combine chicken, bacon, spinach, broccoli, and garlic in a bowl. Mix in ranch dressing and half the cheese.
  5. Spread mixture in a greased 9x13 inch dish. Top with remaining cheese.
  6. Bake for 15-20 minutes until cheese is bubbly and golden.
  7. Allow to cool for 5 minutes before serving.
