  2. Peel and mash the overripe bananas until smooth.
  3. Mix in the beaten egg, cooled melted butter, and vanilla extract with the bananas until smooth.
  4. In a separate bowl, whisk together the all-purpose flour, brown sugar, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in chocolate chips or chopped walnuts if desired.
  7. Fill each muffin liner about two-thirds full with the batter.
