Method
 

Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C).
  2. Pat the chuck roast dry and season with kosher salt and black pepper.
  3. Heat olive oil in a Dutch oven and sear the roast for 5 minutes per side until golden-brown.
  4. In the same pot, melt the butter and caramelize yellow onions for 25-30 minutes.
  5. Add minced garlic to the onions and cook for an additional 2 minutes.
  6. Deglaze the pot with dry white wine, simmering until reduced by half.
  7. Stir in flour, then add beef broth to cover the roast three-quarters of the way.
  8. Return the roast to the pot, cover, and braise in the oven for 3.5 hours.
  9. Once done, let the roast cool slightly and shred with forks.
  10. Top the shredded beef with Gruyere cheese and melt in the oven at 400°F (200°C) for 5-7 minutes.
  11. Serve warm with sliced baguette.
