- In a large bowl, combine warm water with sugar. Sprinkle yeast on top and let sit for 5-10 minutes.
- Add olive oil, minced garlic, salt, mixed herbs, and flour. Stir until a shaggy dough forms.
- Knead the dough on a floured surface for 6-8 minutes, adding Parmesan cheese halfway through.
- Place kneaded dough in a greased bowl, cover, and let rise in a warm area for about 1 hour.
- Once risen, punch down the dough, divide into three equal parts, and roll into ropes.
- Braid the three ropes together, then tuck ends underneath and place on a baking sheet.
- Let the braided loaf rise for another 30-40 minutes, covering loosely with a towel.
- Preheat your oven to 375°F (190°C) during the last few minutes of the second rise.
- Brush the loaf with melted butter, sprinkle with salt, and bake for 25-30 minutes.
- Cool on a wire rack for about 10 minutes before slicing.
