Prepare Garlic Sauce
- In a medium saucepan, heat ½ cup of heavy cream with minced garlic over medium-low heat for about 5 minutes. Stir occasionally until fragrant but not boiling. Remove from heat and mix in ⅓ cup of mayonnaise, seasoning with salt and pepper to taste.
Form Patties
- Combine ground beef, minced garlic, garlic powder, salt, and black pepper in a large bowl. Mix gently until just combined. Shape into four equal patties, making slight indentations for even cooking.
Cook Patties
- Preheat grill or skillet to medium-high heat. Cook patties for 4-5 minutes on one side, flip and cook for another 4-5 minutes until they reach an internal temperature of 160°F. Let rest for 2 minutes.
Toast Buns
- Slice brioche buns and brush cut sides with melted butter. Toast in a skillet or under a broiler for 1-2 minutes until golden brown.
Assemble Burgers
- Place arugula on each bottom bun, add a patty, drizzle with garlic sauce, and top with the other bun. Serve immediately.
