- Preheat oven to 375°F (190°C) and prepare your baking dish with nonstick spray.
- Sauté diced onions in a medium skillet over medium heat for about 5 minutes, until soft and translucent.
- In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix until well blended.
- Transfer the mixture into the greased baking dish and shape into a loaf.
- Sprinkle the remaining Parmesan cheese on top for a crust and add optional paprika or Italian seasoning.
- Bake in the preheated oven for 45-50 minutes, checking for doneness at an internal temperature of 165°F (74°C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
