Method
 

Cooking Instructions
  1. Preheat oven to 375°F (190°C) and prepare your baking dish with nonstick spray.
  2. Sauté diced onions in a medium skillet over medium heat for about 5 minutes, until soft and translucent.
  3. In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix until well blended.
  4. Transfer the mixture into the greased baking dish and shape into a loaf.
  5. Sprinkle the remaining Parmesan cheese on top for a crust and add optional paprika or Italian seasoning.
  6. Bake in the preheated oven for 45-50 minutes, checking for doneness at an internal temperature of 165°F (74°C).
  7. Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
