- Preheat your oven to 400°F (200°C).
- Wash and dry two medium-sized zucchinis, then cut a thin slice off the bottom of each. Slice the zucchini crosswise into thin segments without cutting all the way through.
- Transfer the sliced zucchinis to a baking dish. Melt butter and drizzle over the zucchinis, coating everything evenly.
- In a bowl, combine grated parmesan, black pepper, minced garlic, smoked paprika, salt, and Italian seasoning. Mix well and rub generously over the zucchinis.
- Place the zucchini in the preheated oven and bake for 25-30 minutes until golden-brown and crisp.
- Remove from the oven, let cool for a few minutes, and sprinkle with chopped parsley before serving.
