Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry two medium-sized zucchinis, then cut a thin slice off the bottom of each. Slice the zucchini crosswise into thin segments without cutting all the way through.
  3. Transfer the sliced zucchinis to a baking dish. Melt butter and drizzle over the zucchinis, coating everything evenly.
  4. In a bowl, combine grated parmesan, black pepper, minced garlic, smoked paprika, salt, and Italian seasoning. Mix well and rub generously over the zucchinis.
  5. Place the zucchini in the preheated oven and bake for 25-30 minutes until golden-brown and crisp.
  6. Remove from the oven, let cool for a few minutes, and sprinkle with chopped parsley before serving.
