Preparation
  1. Preheat your oven to 425°F (220°C). Let the pizza dough sit at room temperature for about 15 minutes.
  2. Shape the dough into a circle on a floured surface.
  3. Place the shaped dough on the pizza pan and pre-bake for 8 minutes.
  4. While the crust is baking, combine balsamic vinegar, raspberries, sugar, and a cornstarch slurry in a saucepan. Heat until boiling, then simmer for 8 minutes.
  5. Strain the glaze to remove seeds.
  6. Sauté thinly sliced onions in olive oil over medium-high heat for about 10-15 minutes until caramelized.
  7. Assemble the pizza by layering mozzarella cheese, goat cheese, and sautéed onions on the pre-baked crust.
  8. Bake the assembled pizza for an additional 10-12 minutes until the cheese is bubbly and golden brown.
  9. Drizzle the raspberry balsamic glaze over the baked pizza and sprinkle fresh arugula before slicing.
