Ingredients
  

For the Shrimp
  • 1 pound Large Shrimp, peeled and deveined
  • 2 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper (optional)
For the Corn Salsa
  • 1 cup Frozen Corn (thawed)
  • 1/2 cup Red Onion, diced
  • 1/4 cup Cilantro, chopped
  • 1 teaspoon Jalapeño, diced (optional)
  • 1 lime Lime Juice
For the Creamy Garlic Sauce
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1 tablespoon Lemon Juice
  • 1 clove Garlic, minced
For the Bowl Assembly
  • 1 whole Avocado, sliced or mashed
  • 2 tablespoons Sesame Seeds
  • 2 tablespoons Green Onions, sliced

Method
 

Preparation
  1. Combine shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper in a bowl. Toss until coated and marinate for about 10 minutes.
  2. Mix thawed corn, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a separate bowl. Stir and let sit for 10 minutes.
  3. Preheat the grill to medium heat. Grill shrimp for 2-3 minutes on each side until pink and opaque. Remove from grill.
  4. Whisk together mayonnaise, sour cream, lemon juice, minced garlic, and salt and pepper in a bowl until smooth.
  5. Layer corn salsa in serving bowls, followed by grilled shrimp, then top with avocado slices.
  6. Drizzle the garlic sauce over the bowl and garnish with sesame seeds and green onions. Serve immediately.
