Step-by-Step Instructions for Ground Turkey Zucchini Casserole
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil and sauté the chopped onion and minced garlic for about 2 minutes.
  3. Add ground turkey to the skillet and cook for 5-6 minutes until browned and no longer pink.
  4. Stir in drained diced tomatoes, dried Italian herbs, salt, and pepper, and let simmer for 3-4 minutes.
  5. Layer half of the zucchini slices in the baking dish, add half of the turkey mixture, and half of the mozzarella cheese. Repeat the layering.
  6. Bake uncovered for 30-35 minutes until cheese is bubbly and golden brown.
  7. Let the casserole cool for about 5 minutes before serving.
