Ingredients

For the Granola Base
  • 2 cups Rolled Oats Use rolled oats for best texture.
  • 1 teaspoon Cinnamon Adjust to taste, or omit if desired.
  • 1/2 cup Almond Butter Can substitute with peanut butter or sunflower seed butter.
  • 1/4 cup Honey Maple syrup can be used for a vegan option.
  • 1 teaspoon Vanilla Extract Use pure extract for the best results.
For the Cups
  • 2 cups Greek Yogurt Substitute with dairy-free yogurt, like coconut yogurt, for a vegan version.
  • 1 cup Fresh Berries Any fresh or frozen berries can be used; consider seasonal fruits for variety.

Equipment

  • Muffin tin
  • Mixing bowl
  • Spatula
  • Parchment muffin liners

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine rolled oats, ground cinnamon, almond butter, honey, and vanilla extract. Mix until well-blended.
  2. Line a muffin tin with parchment muffin liners. Press the granola mixture into the bottom of each muffin cup, about ¼ inch thick.
  3. Spoon Greek yogurt onto each crust, filling each cup almost to the top and smoothing it out.
  4. Sprinkle fresh berries over each yogurt layer, pressing them slightly into the yogurt.
  5. Place the muffin tin in the freezer for at least 3 hours or until firm to the touch.
  6. Once frozen, remove each cup and store in an airtight container or freezer bag for up to 2 months.
