  • 1 teaspoon Dried Oregano or thyme/basil as alternatives
  • 1/2 teaspoon Red Pepper Flakes adjust for spice preference
  • 1 teaspoon Salt sea salt is ideal
  • 1 teaspoon Pepper
For the Topping
  • 1 cup Feta Cheese, Crumbled goat cheese can be used
  • 2 tablespoons Fresh Parsley for garnish
  • 2 slices Lemon for serving

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Whisk until well blended.
  2. Place the chicken breasts into a resealable bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
  3. Prepare the feta topping by mixing crumbled feta cheese with a drizzle of olive oil, salt, and pepper. Set aside.
  4. Preheat your oven to 400°F (200°C).
  5. Remove the chicken from the marinade and discard the marinade. Arrange the chicken in a baking dish and spoon the feta topping over each piece. Bake for 25-30 minutes.
  6. Optionally, broil for 2-3 minutes for a crispy topping, watching closely to prevent burning.
  7. Let the chicken rest for 5 minutes before serving. Garnish with parsley and serve warm with greens or lemon wedges.
