Step-by-Step Instructions
  1. Preheat your oven to 325°F. Combine graham cracker crumbs, sugar, cinnamon, and melted butter in a bowl and mix well. Press into a greased muffin tin and chill.
  2. Beat softened cream cheese with sugar until smooth. Add vanilla, flour, and egg, mixing on low speed.
  3. Peel and dice your Golden Delicious apples. Toss with lemon juice, cinnamon, nutmeg, and cornstarch in a bowl.
  4. Spoon cheesecake batter into chilled crusts, then layer the apple mixture on top.
  5. Combine rolled oats, brown sugar, cinnamon, and softened butter until crumbly. Sprinkle over apples.
  6. Bake for 28-30 minutes until edges are set and centers jiggle slightly. Look for a golden streusel.
