Step-by-Step Instructions for Cherry Amaretto Tiramisu
  1. In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Beat on medium speed for 2-3 minutes until smooth and fluffy.
  2. Add 1/4 cup of amaretto liqueur, 1/4 cup of cherry juice, and 1 teaspoon of vanilla extract. Beat for 1-2 minutes until blended.
  3. In a separate bowl, mix together 1/4 cup of granulated sugar and 1/4 cup of cherry preserves until well combined. Fold into the mascarpone mix.
  4. Coarsely chop about 1 cup of fresh cherries and fold them into the mascarpone mixture, distributing evenly.
  5. In a shallow dish, combine 1/2 cup of amaretto and 1/2 cup of cherry juice. Stir well to create the soaking mixture.
  6. Dip each ladyfinger quickly into the soaking mixture, ensuring they are coated but not soggy. Lay them side by side in a 9x13 inch baking dish.
  7. Spread half of the mascarpone mixture over the layer of ladyfingers and smooth it out evenly.
  8. Repeat the dipping process with more ladyfingers and place them on top of the mascarpone layer. Spread the remaining mascarpone mixture over it.
  9. Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
  10. Dust the top with cocoa powder and sprinkle dark chocolate shavings just before serving.
