Step-by-Step Instructions for Cherry Amaretto Tiramisu
- In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Beat on medium speed for 2-3 minutes until smooth and fluffy.
- Add 1/4 cup of amaretto liqueur, 1/4 cup of cherry juice, and 1 teaspoon of vanilla extract. Beat for 1-2 minutes until blended.
- In a separate bowl, mix together 1/4 cup of granulated sugar and 1/4 cup of cherry preserves until well combined. Fold into the mascarpone mix.
- Coarsely chop about 1 cup of fresh cherries and fold them into the mascarpone mixture, distributing evenly.
- In a shallow dish, combine 1/2 cup of amaretto and 1/2 cup of cherry juice. Stir well to create the soaking mixture.
- Dip each ladyfinger quickly into the soaking mixture, ensuring they are coated but not soggy. Lay them side by side in a 9x13 inch baking dish.
- Spread half of the mascarpone mixture over the layer of ladyfingers and smooth it out evenly.
- Repeat the dipping process with more ladyfingers and place them on top of the mascarpone layer. Spread the remaining mascarpone mixture over it.
- Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
- Dust the top with cocoa powder and sprinkle dark chocolate shavings just before serving.
