Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and coat a baking sheet with nonstick cooking spray or line with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, baking powder, salt, and cinnamon until fully combined.
  3. In a large mixing bowl, whisk together the melted butter and sugar until creamy. Then add the egg, vanilla, and applesauce, mixing until slightly frothy.
  4. Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Fold in the diced apples.
  5. Drop tablespoon portions of the batter onto the baking sheet, leaving enough space between each portion.
