  2. Pour white wine to deglaze the pan, scraping up bits. Simmer for 2-3 minutes, then add beef broth and bring to a gentle boil. Simmer for another 15 minutes.
  3. Preheat oven's broiler. Divide hot soup into oven-safe bowls. Top each with toasted baguette slices and sprinkle with grated Gruyère cheese.
  4. Place bowls under the broiler for 3-5 minutes until cheese is bubbly and golden.
  5. Remove from oven, garnish with thyme, and serve hot.
