Preparation
- Cut the beef stew meat into bite-sized pieces. Halve the baby potatoes or parboil them for 5 minutes.
- Heat olive oil in a skillet. Sear the beef pieces until browned on all sides, about 3-4 minutes.
- Transfer the seared beef to the slow cooker.
- In a mixing bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to create the garlic butter sauce.
- Place halved potatoes in the slow cooker. Add seared beef and pour garlic butter sauce over it. Add beef broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Let the Garlic Butter Beef Bites rest for about 10 minutes before serving.
