- Preheat your oven to 375°F (190°C). Slice the jalapeños in half lengthwise, removing the seeds to control the heat level, and place them on a baking sheet cut side up. Fill each half generously with cream cheese, then bake for 25-30 minutes until they are bubbly and golden brown.
- Let the baked jalapeños cool slightly. Take two slices of thick white bread and layer cheddar cheese on one slice and Monterey Jack on the other. Chop the baked jalapeños and distribute them evenly over the cheese on the Monterey Jack slice, adding crispy bacon pieces.
- Heat a skillet over medium-low heat. Generously butter the outer sides of the assembled sandwiches and grill for about 3-4 minutes per side until golden brown and the cheese melts.
- Remove the sandwiches from the skillet, cut them in half, and serve immediately.
