  • 1 orange zest or lemon zest

Method
 

Crêpes Making Process
  1. In a medium bowl, whisk together 1 cup of flour, 2 eggs, 1 cup of milk, and 2 tablespoons of melted unsalted butter until the mixture is silky and smooth. Allow the batter to rest for 30 minutes at room temperature.
  2. Heat a non-stick skillet over medium heat and lightly grease with a dab of butter. Pour about 1/4 cup of batter into the skillet, swirling gently to create a thin layer. Cook for 2-3 minutes or until the edges begin to lift and the bottom is golden. Flip and cook for another 1-2 minutes. Stack cooked crêpes on a plate to keep warm.
  3. In a separate bowl, combine 1 cup of mascarpone cheese, 1/4 cup of honey, and the zest of one orange. Blend until smooth and creamy.
  4. Spread a generous layer of the honey mascarpone filling onto half of a cooked crêpe, fold it over, and then fold it in half again. Arrange neatly on a serving plate.
  5. Serve warm with a dusting of powdered sugar or a drizzle of warm orange sauce for extra elegance.
