Preparation Steps
  1. Prepare the crust by combining graham cracker crumbs, melted butter, and sugar, press into the bottom of a 9-inch springform pan, and bake at 350°F (175°C) for about 10 minutes.
  2. Make the strawberry sauce by cooking fresh strawberries with sugar over medium heat for 5-7 minutes until syrupy, then cool.
  3. Blend the cheesecake filling ingredients until smooth and creamy.
  4. Combine the layers by pouring half the filling into the crust, adding dollops of strawberry sauce, and then the remaining filling. Swirl with a knife.
  5. Bake the cheesecake in a water bath at 325°F (160°C) for 50-60 minutes until edges are set.
  6. Chill the cheesecake for at least 6 hours or overnight before serving.
