Ingredients
  

For the Butter Beans
  • 2 cups chopped butter beans drained
  • 1 cup vegetable stock gluten-free if necessary
  • 2 cups chopped kale can substitute with spinach
For the Sauce
  • 2 tablespoons unsalted butter replace with vegan butter for dairy-free
  • 3 cloves garlic fresh minced
  • 1/3 cup sundried tomatoes can substitute with roasted herb tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon Tuscan Marry Me Blend store-bought or homemade
  • 1 teaspoon sea salt adjust to taste
  • 1 cup heavy cream substitute with full-fat coconut milk for dairy-free
  • 1/4 cup white cooking wine can be omitted
  • 2 tablespoons fresh lemon juice preferably fresh
For the Finish
  • 1/4 cup grated Parmesan optional for vegan adaptations

Method
 

Steps
  1. Melt the butter in a medium skillet over medium heat until bubbly and fragrant, about 2 minutes. Add minced garlic and sauté for 1 minute until golden and aromatic.
  2. Stir in the Tuscan Marry Me Blend and a pinch of sea salt. Cook for 30 seconds, then add chopped sundried tomatoes and tomato paste.
  3. Reduce heat to low, pour in heavy cream, vegetable stock, and lemon juice. Stir well and let it gently bubble for 1-2 minutes.
  4. Add grated Parmesan cheese, whisk continuously until it melts and the sauce thickens, about 2-3 minutes.
  5. Introduce chopped kale and butter beans, stirring to coat in the creamy sauce. Simmer over low heat for 5-6 minutes until the kale wilts.
  6. Serve warm with additional grated Parmesan if desired.
