  • 150 grams Sweet Dark Chocolate Ensure it's dairy-free.
  • 1/4 cup Peanut Butter Almond or cashew butter can also be used.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (356°F) and prepare a 15cm baking tray with baking paper, greasing it lightly.
  2. Melt unsalted butter in a saucepan over low heat, then mix in soy milk, white caster sugar, and vanilla extract. Add sweet dark chocolate and stir until smooth.
  3. Sift together plain white flour, cocoa powder, and salt in a mixing bowl.
  4. Pour the melted wet mixture into the dry ingredients and fold gently until combined, avoiding over-mixing.
  5. Spread the brownie batter into the prepared tray and bake for about 20 minutes until a crackly top forms.
  6. Allow brownies to cool completely in the tray for at least 30 minutes.
  7. Melt the remaining sweet dark chocolate in a saucepan and mix in peanut butter until smooth to prepare the ganache.
  8. Pour the ganache evenly over the cooled brownies and refrigerate for at least 1 hour to set.
