- In a large mixing bowl, whisk together mayonnaise, red wine vinegar, garlic powder, oregano, and a pinch of salt and pepper. Mix until smoothly combined, then fold in shredded lettuce, sliced red onion, and banana peppers. Set aside.
- Layer each sub roll with salami, pepperoni, turkey, and provolone cheese.
- Preheat the oven’s broiler to high and line a baking sheet with parchment paper. Broil assembled sandwiches for 2-3 minutes until cheese melts and edges of meats are crisp.
- Top each broiled sandwich with fresh tomato slices and additional salt and pepper, then spoon grinder salad onto each sandwich.
- Sprinkle grated parmesan cheese on top and close the sandwich. Slice in half to serve.
