Ingredients
  

For the Salad
  • 0.5 cups mayonnaise substitute with Greek yogurt for lighter option
  • 0.25 cups red wine vinegar swap with apple cider vinegar if needed
  • 1 teaspoon garlic powder can use fresh minced garlic
  • 1 teaspoon oregano Italian seasoning can be used as substitute

  • 2 cups shredded lettuce spinach or arugula can be used
  • 0.5 cups sliced red onion green onions can be used for milder flavor
  • 0.5 cups banana peppers jalapeños can be used for spicier option
For the Sandwich
  • 3 slices salami substitute with any deli meats
  • 3 slices pepperoni
  • 3 slices turkey
  • 1 slices provolone cheese mozzarella or cheddar can be used
  • 1 slices tomato heirloom tomatoes are flavorful
  • to taste grated parmesan cheese can replace with Pecorino Romano
  • 4 sub rolls any type of bread or wrap can be used

Method
 

Preparation
  1. In a large mixing bowl, whisk together mayonnaise, red wine vinegar, garlic powder, oregano, and a pinch of salt and pepper. Mix until smoothly combined, then fold in shredded lettuce, sliced red onion, and banana peppers. Set aside.
  2. Layer each sub roll with salami, pepperoni, turkey, and provolone cheese.
  3. Preheat the oven’s broiler to high and line a baking sheet with parchment paper. Broil assembled sandwiches for 2-3 minutes until cheese melts and edges of meats are crisp.
  4. Top each broiled sandwich with fresh tomato slices and additional salt and pepper, then spoon grinder salad onto each sandwich.
  5. Sprinkle grated parmesan cheese on top and close the sandwich. Slice in half to serve.
