Ingredients
  

Marinade Ingredients
  • 1 cup orange juice fresh or bottled
  • 1 cup lime juice fresh for best flavor
  • 1/2 cup red wine vinegar or apple cider vinegar
  • 1/2 cup olive oil or avocado oil
  • 1/4 cup honey or agave syrup
  • 1/4 cup soy sauce or tamari for gluten-free
  • 3 cloves minced garlic fresh preferred
  • 1 piece jalapeño minced, seeds removed for less heat
  • 1 teaspoon salt kosher recommended
  • 1 teaspoon ground cumin omit if unavailable
  • 1 teaspoon dried thyme Italian seasoning can work
  • 1 teaspoon ground allspice can replace with cinnamon
  • 1/2 teaspoon crushed red pepper omit for milder
  • 1/2 teaspoon ground black pepper freshly ground preferred
  • 1/4 teaspoon ground cinnamon use sparingly if preferred

Method
 

Directions
  1. In a glass bowl or resealable plastic bag, blend together the orange juice and zest, lime juice and zest, red wine vinegar, olive oil, and honey. Stir in soy sauce, minced garlic, jalapeño, salt, ground cumin, dried thyme, ground allspice, crushed red pepper, ground black pepper, and ground cinnamon until well combined.
  2. Add your chicken pieces into the marinade, ensuring each piece is fully coated. Seal the bag or cover the bowl tightly. Allow the chicken to marinate in the refrigerator for 2-3 hours.
  3. Take the marinated chicken out of the refrigerator and let it sit at room temperature for about 15 minutes before cooking.
  4. Preheat your grill to medium heat, aiming for around 350°F to 400°F. Remove the chicken from the marinade and place it on the grill. Grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F.
  5. Transfer the grilled chicken to a platter and let it rest for 5-10 minutes. Slice or serve whole.
