  • 1 medium diced onion yellow or white onions
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
For the Buns
  • 4 buns hamburger or brioche buns or lettuce wraps for low-carb option
Optional Toppings
  • 1 cup pickled cucumbers for a crunchy contrast
  • 1 cup shredded carrots for sweetness and texture
  • 1/4 cup cilantro optional
  • 4 eggs fried eggs for an indulgent touch

Cooking Instructions
  1. Heat a tablespoon of oil in a large skillet over medium-high heat. Add the lean ground beef, breaking it apart, and sauté for 6-7 minutes until cooked through.
  2. Stir in the diced onion, minced garlic, and grated ginger. Cook for 2 minutes until the onions are soft and translucent.
  3. Lower the heat and pour in the soy sauce, brown sugar, gochujang, and sesame oil. Mix well and let it simmer for 5 minutes until the sauce thickens.
  4. Butter the inner sides of the buns and toast them in a skillet over medium heat for 2-3 minutes until golden brown.
  5. Assemble the Korean Beef Sloppy Joes by spooning the beef mixture onto the toasted buns and adding optional toppings.
