- Pat the cod fillets dry and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat, then sear cod for 2-3 minutes per side until golden brown.
- Transfer cod to a plate and cover to keep warm. In the same skillet, melt butter and sauté garlic for 30 seconds.
- Stir in fresh lemon juice and lemon zest, simmer for 1 minute.
- Return cod to the skillet, spoon sauce over, and cook for another 2-3 minutes until cod flakes easily.
- Serve cod on plates, garnished with fresh parsley.
