  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha adjust to taste
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the potatoes, then cut them into bite-sized cubes and soak in cold water for at least 30 minutes.
  3. Drain and pat the potatoes dry, then toss with olive oil, salt, pepper, and seasonings in a large mixing bowl.
  4. Spread the seasoned potatoes on the prepared baking sheet and bake for 25-30 minutes, flipping halfway through.
  5. While potatoes bake, prepare the sauce by combining mayonnaise, sriracha, and lemon juice in a small saucepan over medium heat.
  6. Remove crispy potatoes from the oven, drizzle with sauce, and sprinkle with chopped chives or parsley before serving.
  7. Serve warm with a side dip and enjoy!
