Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix until combined.
  3. Transfer the meat mixture into the greased baking dish, pressing it down to form a loaf shape.
  4. Bake the meatloaf in the oven for 20 minutes.
  5. Cook the macaroni according to package instructions until al dente, then drain.
  6. In a medium saucepan, melt butter over medium heat and whisk in flour to form a roux.
  7. Gradually add milk, whisking until thickened, about 3-5 minutes.
  8. Stir in salt, pepper, paprika, dry mustard, and shredded cheese, mixing until melted.
  9. Fold the cooked macaroni into the cheese sauce and pour over the meatloaf.
  10. Sprinkle remaining shredded cheese on top and bake for an additional 25 minutes until bubbly.
  11. Let the casserole rest for 10 minutes before slicing.
