Step-by-Step Instructions
  1. Start by prepping your veggies and fruits. Core apples and chop into ½” cubes, peel and slice the carrots diagonally into ¼” thick pieces, dice onion into ½” pieces, and finely chop garlic.
  2. In a large mixing bowl, whisk together olive oil, maple syrup, stone ground Dijon mustard, salt, black pepper, and thyme until well combined.
  3. Add the chopped carrots, apple cubes, diced onion, and garlic to the bowl. Toss gently to ensure each piece is well coated.
  4. Preheat your oven to 425°F (220°C). Spread the mixture in a single layer on a metal sheet pan. Roast for 15 minutes, then flip and roast for another 10-15 minutes until tender and caramelized.
  5. Remove from the oven, let cool slightly, and serve warm as a side dish.
