- Start by prepping your veggies and fruits. Core apples and chop into ½” cubes, peel and slice the carrots diagonally into ¼” thick pieces, dice onion into ½” pieces, and finely chop garlic.
- In a large mixing bowl, whisk together olive oil, maple syrup, stone ground Dijon mustard, salt, black pepper, and thyme until well combined.
- Add the chopped carrots, apple cubes, diced onion, and garlic to the bowl. Toss gently to ensure each piece is well coated.
- Preheat your oven to 425°F (220°C). Spread the mixture in a single layer on a metal sheet pan. Roast for 15 minutes, then flip and roast for another 10-15 minutes until tender and caramelized.
