  • 2 medium Apples Honeycrisp or Granny Smith work best.
  • 1 medium Onion Shallots can be used as a milder alternative.
  • 2 cloves Garlic Can substitute with garlic powder.
For the Glaze
  • 2 tablespoons Olive Oil or Aquafaba Olive oil for a classic, aquafaba keeps it oil-free.
  • 2 tablespoons Maple Syrup Adjust to taste.
  • 2 tablespoons Stone Ground Dijon Mustard Can swap for another grainy mustard.
  • 1 teaspoon Salt Adjust to liking.
  • 1 teaspoon Black Pepper Adjust to liking.
  • 1 teaspoon Thyme Rosemary works well too.

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Core and chop the apples into ½-inch cubes.
  3. Slice the carrots diagonally into ¼-inch thick pieces.
  4. Dice the onion finely and chop the garlic.
  5. In a large bowl, whisk together olive oil (or aquafaba), maple syrup, Dijon mustard, salt, black pepper, and thyme until well blended.
  6. Add the chopped carrots, apples, diced onion, and garlic to the bowl with the glaze and toss to coat evenly.
  7. Spread the mixture evenly across two baking sheets.
  8. Roast for 15 minutes, then flip the mixture using a spatula.
  9. Continue roasting for an additional 10 to 15 minutes until fork-tender and beautifully browned.
