Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Chop the red onion and garlic, halve the cherry tomatoes, and rinse the olives and capers.
  3. Spread the onion, garlic, tomatoes, olives, and capers evenly in the baking dish.
  4. Drizzle olive oil over the vegetables and sprinkle with oregano, salt, and pepper. Toss gently.
  5. Pat the cod fillets dry and season with salt, pepper, and olive oil.
  6. Layer the cod on top of the vegetables and drizzle with more olive oil and lemon zest.
