For the Marinade
  • 1/4 cup Extra Virgin Olive Oil For richer flavor
  • 3 cloves Fresh Garlic Minced
  • 1 tablespoon Fresh Lemon Juice Skip bottled version
  • 1 teaspoon Lemon Zest
  • 2 tablespoons Sweet Chili Sauce Can use honey instead
  • to taste Salt
  • to taste Black Pepper
For the Vegetables
  • 2 cups Cherry Tomatoes Diced tomatoes can be used if needed
  • 1/2 cup Pitted Olives Can substitute with capers
  • 1/4 cup Fresh Herbs Thyme, rosemary, oregano, and parsley

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and pat the fish fillets dry using paper towels.
  2. In a bowl, whisk together olive oil, lemon juice, sweet chili sauce, minced garlic, lemon zest, salt, and pepper.
  3. Coat the fish fillets with half of the marinade and let sit for 10 minutes.
  4. In the bowl with the remaining marinade, add cherry tomatoes and olives, tossing gently to combine.
  5. In a baking dish, spread the marinated cherry tomatoes and olives, then place the fish fillets on top in a single layer.
  6. Bake for 15 to 20 minutes until the fish flakes easily and is opaque.
  7. Allow the dish to rest for a few minutes before serving, spooning juices over the fish.
