Ingredients
  

For the Steak Marinade
  • 1 lb Sirloin Steak Tender and flavorful cut.
  • 2 tbsp Olive Oil For marinating.
  • 2 cloves Garlic Cloves Minced.
  • 2 tbsp Lemon Juice Fresh.
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • to taste Salt
  • to taste Black Pepper
For the Bowl
  • 2 cups Cooked Grains Brown Rice/Quinoa/Cauliflower Rice.
  • 1 cup Roasted Chickpeas
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Cucumber Diced.
  • 1/2 cup Red Onion Thinly sliced.
  • 1/2 cup Kalamata Olives
  • 1/2 cup Feta Cheese Crumbled.
  • 2 tbsp Fresh Herbs Parsley/Dill.
For the Tzatziki
  • 1 cup Greek Yogurt Plain or coconut.
  • 1/2 cup Grated Cucumber Squeeze out excess water.
  • 1 tbsp Honey Optional.

Method
 

Steps
  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin steak and marinate for at least 30 minutes and up to 4 hours.
  2. Prepare tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, and salt in a bowl. Squeeze excess moisture from cucumber, stir well, and refrigerate.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, and salt and pepper to create a vinaigrette. Set aside.
  4. Heat a skillet over high heat and sear the marinated steak for 4-5 minutes on each side. Remove and let rest for 5 minutes before slicing.
  5. Assemble the bowl with cooked grains at the bottom, topped with sliced steak, cherry tomatoes, cucumber, red onion, olives, and other veggies.
  6. Dollop tzatziki over the bowl, sprinkle feta cheese and fresh herbs, and drizzle vinaigrette over everything.
