- In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin steak and marinate for at least 30 minutes and up to 4 hours.
- Prepare tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, and salt in a bowl. Squeeze excess moisture from cucumber, stir well, and refrigerate.
- In a small bowl, whisk together olive oil, lemon juice, honey, and salt and pepper to create a vinaigrette. Set aside.
- Heat a skillet over high heat and sear the marinated steak for 4-5 minutes on each side. Remove and let rest for 5 minutes before slicing.
- Assemble the bowl with cooked grains at the bottom, topped with sliced steak, cherry tomatoes, cucumber, red onion, olives, and other veggies.
- Dollop tzatziki over the bowl, sprinkle feta cheese and fresh herbs, and drizzle vinaigrette over everything.
