  • 1 tsp Salt Use sea salt for added minerals.
  • 1 tsp Black Pepper
For the Base

Method
 

Marinade and Prepare
  1. In a small bowl, mix together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Coat the sirloin steak and let it marinate for at least 30 minutes.
  2. While the steak marinates, prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl. Cover and refrigerate.
  3. In another bowl, whisk together olive oil, lemon juice, honey (if using), salt, and pepper for the vinaigrette.
Cook and Assemble
  1. Heat a skillet over medium-high heat for about 5 minutes. Sear the marinated steak for 4-5 minutes per side. Remove from heat, cover, and rest for 5 minutes.
  2. Cook your chosen grains according to package instructions; for low-carb, sauté cauliflower rice for about 5 minutes.
  3. In bowls, layer cooked grains, sliced steak, tomatoes, cucumber, red onion, olives, and feta. Drizzle with tzatziki and vinaigrette.
  4. Garnish with fresh herbs and serve immediately.
