Marinade and Prepare
- In a small bowl, mix together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Coat the sirloin steak and let it marinate for at least 30 minutes.
- While the steak marinates, prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl. Cover and refrigerate.
- In another bowl, whisk together olive oil, lemon juice, honey (if using), salt, and pepper for the vinaigrette.
Cook and Assemble
- Heat a skillet over medium-high heat for about 5 minutes. Sear the marinated steak for 4-5 minutes per side. Remove from heat, cover, and rest for 5 minutes.
- Cook your chosen grains according to package instructions; for low-carb, sauté cauliflower rice for about 5 minutes.
- In bowls, layer cooked grains, sliced steak, tomatoes, cucumber, red onion, olives, and feta. Drizzle with tzatziki and vinaigrette.
- Garnish with fresh herbs and serve immediately.
