Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Spray a 9X5 loaf pan with nonstick spray, and line the bottom and two sides with parchment paper.
  2. In a large mixing bowl, mash 3 extra ripe bananas until smooth and creamy, about 2-3 minutes.
  3. Add white granulated sugar (or brown sugar), 2 large eggs, 1/3 cup of canola oil, and 1 teaspoon of vanilla extract. Mix thoroughly for about 2-3 minutes.
  4. Sift in 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt. Stir gently until no flour streaks remain.
  5. Pour the batter into the prepared loaf pan, spreading it evenly. Bake for 40-45 minutes until a toothpick inserted comes out clean.
  6. Cool in the pan for about 10-15 minutes before lifting out using parchment paper and transferring to a wire rack.
