- Preheat your oven to 350°F (175°C). Spray a 9X5 loaf pan with nonstick spray, and line the bottom and two sides with parchment paper.
- In a large mixing bowl, mash 3 extra ripe bananas until smooth and creamy, about 2-3 minutes.
- Add white granulated sugar (or brown sugar), 2 large eggs, 1/3 cup of canola oil, and 1 teaspoon of vanilla extract. Mix thoroughly for about 2-3 minutes.
- Sift in 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt. Stir gently until no flour streaks remain.
- Pour the batter into the prepared loaf pan, spreading it evenly. Bake for 40-45 minutes until a toothpick inserted comes out clean.
- Cool in the pan for about 10-15 minutes before lifting out using parchment paper and transferring to a wire rack.
