Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Spray an oven-proof casserole dish with olive oil and brown the chicken thighs for about 5-7 minutes on each side, along with onion, garlic, and ginger.
  3. Stir in the spices—paprika, coriander, cumin, chilli powder, turmeric, and cinnamon—coating the chicken evenly and sautéing for 2-3 minutes.
  4. Add the carrots, honey, orange juice, orange zest, and chicken stock to the dish and stir well.
  5. Cover and bake in the oven for about 1 hour, checking occasionally.
  6. In the last 20 minutes of baking, add the sliced courgette on top.
  7. Remove from oven, season with salt and pepper, garnish with fresh coriander, and serve.
