- Preheat your oven to 180°C (350°F).
- Spray an oven-proof casserole dish with olive oil and brown the chicken thighs for about 5-7 minutes on each side, along with onion, garlic, and ginger.
- Stir in the spices—paprika, coriander, cumin, chilli powder, turmeric, and cinnamon—coating the chicken evenly and sautéing for 2-3 minutes.
- Add the carrots, honey, orange juice, orange zest, and chicken stock to the dish and stir well.
- Cover and bake in the oven for about 1 hour, checking occasionally.
- In the last 20 minutes of baking, add the sliced courgette on top.
- Remove from oven, season with salt and pepper, garnish with fresh coriander, and serve.
