Step-by-Step Instructions
  1. In a large mixing bowl, combine harissa paste, minced garlic, lemon juice, ground cumin, ground coriander, smoked paprika, olive oil, and salt and pepper to create a marinade.
  2. Add the chicken thighs to the marinade and coat thoroughly. Cover the bowl and refrigerate for at least 15 minutes.
  3. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  4. Arrange the marinated chicken thighs in the greased baking dish in a single layer.
  5. Bake in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  6. Remove the chicken from the oven and let it rest for about 5 minutes before serving.
  7. Garnish with parsley or cilantro and serve with Greek yogurt and your choice of rice or couscous.
