Ingredients
  

For the Marinade
  • 1/2 cup miso paste can substitute with white or yellow miso for milder taste
  • 1/4 cup mirin alternatively, mix of water and sugar can be used
  • 1/4 cup soy sauce tamari can be used for gluten-free option
  • 2 tablespoons sugar can also use honey or maple syrup in smaller amounts
For the Fish
  • 4 fillets black cod sablefish is a great substitute if unavailable
For the Garnish
  • 2 stalks green onions finely sliced for garnish

Method
 

Marinade Preparation
  1. In a medium bowl, combine the miso paste, mirin, soy sauce, and sugar. Whisk them together until smooth and well-blended.
  2. This mixture creates a thick, glossy marinade with a rich aroma.
Marinating Fish
  1. Place the black cod fillets in a shallow dish and pour the marinade over them, ensuring they are fully coated.
  2. Cover the dish tightly with plastic wrap and refrigerate for at least 24 hours.
Cooking Preparation
  1. Preheat your grill or broiler to high heat, around 400°F to 450°F (200°C to 230°C). Lightly oil the grates if using a grill.
Cooking the Fish
  1. Remove excess marinade from the black cod and place it on the grill or under the broiler.
  2. Cook for about 5 to 7 minutes per side, checking for doneness.
Serving
  1. Transfer the cooked black cod to a serving platter.
  2. Garnish with finely sliced green onions and serve alongside steamed jasmine rice or grilled vegetables.
