Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the zucchini, red onion, and tomatoes into 1-inch chunks. Set aside.
  3. In a large mixing bowl, toss the cut vegetables with olive oil and oregano until evenly coated.
  4. Spread the seasoned veggies on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, tossing halfway through.
  6. Sprinkle crumbled feta cheese over the veggies right after removing from the oven.
  7. Serve immediately, optionally alongside pita bread and tzatziki.
