Ingredients
  

Dressing
  • 1/4 cup Balsamic Vinegar Can substitute with red wine vinegar.
  • 1 tablespoon Dijon Mustard Optional to omit.
  • 1 tablespoon Honey Or Agave Nectar; maple syrup can be an alternative.
  • 1 teaspoon Dried Oregano Fresh oregano can be used.
  • 1/3 cup Extra-Virgin Olive Oil Can substitute with neutral oil.
Salad
  • 1 lb Pasta Short shapes like penne or farfalle.
  • 8 oz Fresh Mozzarella Use mozzarella pearls or burrata.
  • 3 medium Peaches Diced; nectarines can be a substitute.
  • 2 cups Cherry Tomatoes Halved; any seasonal tomatoes can work.
  • 1 cup Arugula Can substitute with spinach or baby kale.
  • 1/2 cup Fresh Basil Minced; parsley or mint can be used.

Method
 

Prepare the Dressing
  1. In a small bowl, whisk together balsamic vinegar, Dijon mustard, honey, and dried oregano. Gradually drizzle in extra-virgin olive oil while whisking until the dressing is smooth. Season with salt and pepper to taste.
Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
Combine Ingredients
  1. In a large mixing bowl, combine the cooled pasta, mozzarella, peaches, and cherry tomatoes. Fold in arugula and basil.
Dress the Salad
  1. Pour the dressing over the pasta mixture and toss gently until coated.
Adjust Seasoning and Chill
  1. Taste and adjust seasoning with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.
